Method

  • Season the beef with salt and pepper and fry in the oil until brown all over
  • Brush with mustard and set aside to cool
  • In the same pan using some oil fry off mushrooms, onions and garlic until soften
  • Roll out a sheet of cling film, lay out a sheet of puff pastry, crepes, mushroom mixture and then the beef
  •  Roll all up into a neat cylinder shape
  • Brush the edges with egg wash to seal the pastry together
  •  Egg wash again and add a second lattice layer of pastry
  •  Brush again with egg wash, garnish with thyme leaves and salt
  •  Bake in oven at 180C for 30 minutes
  •  Remove and allow to rest for a further 30 minutes
  • Carve and serve

Ingredients

  • 500 g NIFQA beef fillet
  • 100 g puff pastry
  • 10 mushrooms diced
  • 2 cloves garlic grated
  • 4 crepes (shop bought)
  • 1 egg (egg wash)
  • 1 tbsp thyme leaves
  • 1 tbsp English mustard (optional)
  • 1 tbsp sea salt
  • 1 tbsp pepper
  • 100 ml vegetable oil
