Method
- Season the beef with salt and pepper and fry in the oil until brown all over
- Brush with mustard and set aside to cool
- In the same pan using some oil fry off mushrooms, onions and garlic until soften
- Roll out a sheet of cling film, lay out a sheet of puff pastry, crepes, mushroom mixture and then the beef
- Roll all up into a neat cylinder shape
- Brush the edges with egg wash to seal the pastry together
- Egg wash again and add a second lattice layer of pastry
- Brush again with egg wash, garnish with thyme leaves and salt
- Bake in oven at 180C for 30 minutes
- Remove and allow to rest for a further 30 minutes
- Carve and serve

- 500 g NIFQA beef fillet
- 100 g puff pastry
- 10 mushrooms diced
- 2 cloves garlic grated
- 4 crepes (shop bought)
- 1 egg (egg wash)
- 1 tbsp thyme leaves
- 1 tbsp English mustard (optional)
- 1 tbsp sea salt
- 1 tbsp pepper
- 100 ml vegetable oil
