Method

For the pizza dough

  • Combine ingredients together until smooth dough is formed
  • If making fresh, allow the dough to rest and prove for 1-2 hours in a bowl, or make it in advance and place in the fridge for 8+ hours to prove
  • Divide dough into 100g balls
  • Roll the dough out flat and place on greaseproof paper

For the calzone filling

  • Fry the lamb mince in a pan until brown using 1-2 tbsp of oil
  • Drain the mince, separate the fat
  • Place the diced vegetables in the same pan and colour
  • Return the lamb to the pan and add the chopped tomatoes, simmering for 20 minutes until the meat has reduced considerably
  • Season as desired
  • Add the mince mixture to the calzone dough base
  • Finish with optional cheese and fresh herbs
  • Place on parchment paper
  • Place calzone in a 180C pre-heated oven for 15-20 minutes
  • Add freshly grated cheese and bake for a further 2 minutes
  • Tear, share and enjoy!

Ingredients

Pizza dough

  • 350 ml water
  • 30 g fast acting yeast
  • 10 g salt
  • 30 g sugar
  • 500 g strong flour

Calzone filling

  • 400 g lamb mince
  • 1 onion
  • 1 carrot
  • 2 cloves garlic
  • 1 courgette
  • 250 g chopped tomatoes
  • 50 g cheddar cheese
  • 100 ml vegetable oil
  • 1 tsp salt
  • 1 tsp pepper
  • 50 g basil (optional)
  • 50 g parmesan (optional)
  • 1 lemon (optional)
